carrot halwa may be a dessert made with grated carrots.it is other names are gajorer halua, gajrela, gajar pak, and carrot halwa.in English it's called pudding .it is a standard dessert .mainly it's present on all occasions like Diwali, Raksha Bandhan, and holi.it is a delicious and healthy recipe too. a large number of carrots are grown in north India. they use in a useful and delicious way.it has a medium self-life. light dessert. origin of carrot halwa is India. in India during festival time, most of the people prefer vegetarian food,gajar halwa may be a best-suited dish ..it is prepared during all the festivals. usually, I made carrot halwa at Diwali.it is a favorite dessert in my family. I made this in two alternative ways traditional and autoclave methods. both come out perfect. we can make it in various methods and straightforward too .but here I share the post for the traditional way.

Carrots are rich in antioxidants .it are very helpful for vision.it has a lot of fibers it promotes gut health. beta carotene present in carrot gives color and it's converted to vitamin .apart this it also contains vitamin C and K.carrot halwa is enriched with a good source of vitamins. along with carrot milk, ghee and nuts are present in halwa. so it is a healthy dessert..it is an excellent dessert for foodies. 150g of carrot halwa-170cal

INGREDIENTS

Carrot- 250g

unsweetened Koya -50g

Milk-100ml

Sugar -225g(if you need less amount)or 250g

Water-150ml

Cashew nuts-25g

Dry grapes-25g

Cardamom powder-1tsp

Ghee-125g

Procedure

Grate the carrot in a food processor or with a grater. add 2tbs ghee to a pan saute the carrot with this ghee for 5 minutes. keep aside .now in a pan add 100 ml of milk along with 150 ml of water. allow the carrot to cook in this milk in a covered pan for 15 minutes on a medium flame. now the carrot gets cooked to 70 percentage. then add khoya, sugar, and cardamom powder into it .now the carrot looks glazy at this stage it looks so yummy. allow cooking for 10 minutes, little by little add ghee in it to gives a glazy look. cook for another 10 minutes. in a separate pan add little ghee then fry the cashew nuts and grapes and add into carrot halwa. make sure the texture should be a little bit runny. after cooling, the halwa gets the correct texture otherwise it becomes solidified. now the carrot halwa is ready.

Add a tablespoon of ghee in a Kadai.

then add the grated carrot to the Kadai and saute for three minutes. allow the carrot to cook for a while.
Now, the carrot was half cooked.to this add milk and water. saute the carrot in it,
covered the pan .aloow the carrot mixture to cook.in this step, the carrot gets more than half cooked. make sure the flame is at medium.it avoid the halwa gets burning.
now open the lid add the sugar in it, after adding sugar, the halwa will be runny.don't worry. It gets thicken after some minutes
then add Koya and cardamom powder. I added here is unsweetened Koya you can also use sweetened Koya but take less amount of sugar. now make give a continuous mix.it makes perfect halwa's consistency. at this slowly add the remaining ghee little by little. don't add the whole ghee at the same time. adding ghee little by little gives the perfect texture and glossy look as in a restaurant.
 
I show the consistency of halwa in the above picture, now it looks runny but after sometimes it gets solidified.don't worry. If you make thick consistency at this stage after cooling it gets a burfi texture.
I give another image to get a clear idea about the texture when you make the spoon move upward, it makes a clear path on Kadai and it doesn't run back..in a separate Kadai, add a teaspoon of ghee fry the cashew nuts to golden brown and grapes to puffy. add this to the mixture. give a stir. now switch off the flame. now your carrot halwa is ready.ENJOY.....😉

 Tips and tricks

•             Use fresh carrots, can use ooty carrot or normal one.

               here I grated the carrot using a food processor it gives an even size and consuming time. if have a food processor you can use .otherwise you grated using a grater. 

•             Avoid high flame

•             Generally, use carrot and sugar in one: one ratio measurement for carrot halwa. if you prefer less sweet, can use sugar three fourth the amount when compared to the carrot.

•             Use ghee 2tps at every step, and at the final stage also .it is a good trick to get a fine glaze look.

•             Keep watching on texture not too runny or not solidify, keep as little bit runny after cooling it gets a correct  halwa  texture

  • To avoid sugar becoming crystalized add some drops 4 to 5 drops of  lemon juice during mixing
