 Masala vada(Masala vadai)

Masala vada is a tempting snack made with dal. lentils are called dal in India .it is also known as parruppu in the southern part of India. lentil is rich in protein. India is the largest producer of lentils. there are different types of lentils available. here, I used pigeon pea (chana dal) to make this masala vada. these pulses are considered as one of the staple food in India and act as an important role in the cuisine. dal is produced by removing the outer black layer of chickpea and spilling the lentils with the help of a machine. nutritional value of 100g chana dal contains 25 percent of protein along with vitamins and minerals. chana dal is great for the heart’s health it helps to reduce bad cholesterol. due to high protein, it aids improve muscular strength. if you are tolerant to milk, chana dal is an alternate source for calcium Folate is essential in the prevention of diseases like stroke, depression, dementia, among others. This is supported by the ‘National Institutes of Health‘.if you are on a weight loss journey then this lentil helps you a lot it gives a feeling of fullness to your stomach.

Parruppu vada is a favorite snack for my hubby. I want to take it along with ginger tea, it is a perfect combination for chai. let's see the recipe, please follow the perfect consistency for grinding.it gives crispy vada.

Ingredients

Spilled chana dal-1 cup

Handful small onion -100g

Green chilly chopped -1tsp

Asafoetida-1/4 tsp

Coriander leaf finely chopped-6tbsp

Curry leaf-finely chopped 2tbsp

Salt -as per taste 

Grated ginger-2tsp

Fennel seed -1tsp

For masala

Red chilly-4nos

Fennel seed-1tsp

Cinnamon-3inch

Grind to coarse powder the above ingredients under the masala list

Procedure

Soak the chana dal in a bowl with water for one and half hours, make sure the lentil is completely soaked.

Now grind the ingredients given under masal list, in a mixer grinder to a coarse powder

Take away 2tbsp soaked chana dal from the soaked dal. put the remaining chana dal in a mixer jar. grind the dal to a coarse consistency like Rava. drain the water completely, during grinding choose pulse mode for grinding it gives sooji consistency. grinding chana dal plays an important role for crispy vada..now take the grind chana dal in a bowl along with small onion, ginger, coriander, and curry leaf, masala powder, green chilly, and asafoetida the ingredients given under the list. give a good mix add the soaked split chana dal and masala with this. make a round and flat patties .heat the oil in a kadhai at medium flame, ensure heat, not at high flame. now drop the flat patty into the oil, fried to golden crispy color vadas. now your tasty vadas are ready.

Take the ingredients given under the list


soak the chana dal for one and a half an hour 


drain the water completely. grind the chana dal in a mixer to a coarse consistency(sooji consistency)


now mix the grind chana dal along with onion, masala, leaves, grated ginger .asafoetida, green chili, soaked chana dal 2tsp, and salt without adding water




At this, if the mixer not binding properly. then add 2tp of chana flour for binding if required

Apply a little oil to the palm. Take the mixture and now make small round patties as shown in the picture.


 If you are not  well at this step, apply oil at cling wrap make patties



put the patties into the medium heat oil,


allow the vada to fry .after that turn the vada .fry for both sides to a golden brown color




Put the fried vada in the drainer.


now crispy hot tasty vadas are ready

  • Grind the dal into big coarse sooji consistency
  • Soak the dal not more than one and half hour
  • Take some 2tsp of soaked dal for mixing on frying time
  • Make sure the heat at medium flame 
  • Give the time for cooking the vada inside completely at medium flame 
  • Use the right amount of masala for a flavourful good taste vada.
  • If the vada does not get binding properly you can add 2tsp of chana dal flour (Bengal gram flour). It helps vada to get binding
  • I used peanut nut oil here .it adds flavor to vada, you can use sunflower oil too
